Ann Skulas-Ray, PhD
Assistant Professor
The University of Arizona Department of Nutritional Sciences

At the conclusion of Dr. Skulas-Ray's lecture, she will be joined by fellow UA Professor Dr. Donato Romagnolo for an epilogue on The Mediterranean Diet and its impact on inflammation.
Both professors will host the session's question and answer session

About Dr. Skulas-Ray's Lecture:
Inflammation affects all of us as we age.  Painful joints in arthritis, artery-clogging plaques that can cause heart disease, and damaged tissues that can become cancerous—each have excessive, chronic inflammation as a central pathological factor.  This has led to widespread interest in dietary strategies, lifestyle choices and supplements that may be able to reduce inflammation.  Dr. Skulas-Ray will offer participants detailed information about inflammation, how it is measured, and where research is headed in the reduction of disease-causing inflammation.  An expert in the field, Dr. Skulas-Ray will offer participants evidence-based advise on nutrition as a tool to curb excessive inflammation, while also including the facts, fads, and fiction that surround this impactful topic. Additionally, she will offer a detailed and thoughtful outlook into her current research on our nation's most popular dietary supplements: fish oil.  Highly-touted as a miracle supplement, Dr. Skulas-Ray will translate the information that accompanies the impact and hype surrounding this $1.2 billion industry.

Nutrition and inflammation ... So much potential and so much misinformation ...
Join us as Dr. Ann Skulas-Ray sets the story straight.

About Dr. Skulas-Ray:
Dr. Skulas-Ray is an Assistant Professor in the Department of Nutritional Sciences at the University of Arizona. An instructor and mentor, she currently conducts research seeking to understand the reasons why clinical studies have not been successful for reducing inflammation with omega-3 fatty acid supplementation – despite mechanistic evidence of their anti-inflammatory potential.  To tackle this riddle, her work has examined whether dose, duration, and/or the use of an inflammatory challenge are crucial elements that influence inflammatory outcomes.  Her research continues to assess the health effects of increasing the intake of individual omega-3 fatty acids on inflammation and other health outcomes, and examining more closely evidence that women may experience greater benefit from supplementation than men. Her studies seek to help us better understand the inconsistency in clinical trial results and optimize the therapeutic potential of omega-3 fatty acids for improving human health.  Dr. Skulas-Ray is currently a reviewer for Nutrition Today, the European Journal of Nutrition, the Nutrition Journal, Molecular Nutritionand Food Research, Pharmacy and Therapeutics, the American Journal of Cardiovascular Drugs, and the Journal of Clinical Lipdology.  She is the author of numerous journal articles, books chapters and encyclopedia entries.  She has been involved in research projects totaling nearly $3 million in funding.
